
No one in my house is a big fan of leftovers, so I try to make them look different the second time I serve them.  We had some leftover fried chicken in the fridge as well as some leftover brown and serve rolls (that I browned a bit too much.  Oops!).  So, I spread the rolls with mayonnaise and added sliced mozzarella and shredded chicken.  Then, I microwaved the rolls for 20-30 seconds.

I served these with leftover corn and some blackberries that I got at Publix today for a yummy, healthy, and frugal lunch!
