Pork Fried Rice
I had a reader request my recipe for pork fried rice. Well, I don't really have one. I have some leftover cooked pork in the freezer from last week. I plan to thaw that and dice it up. Then I cook 1 cup of rice. Meanwhile, I scramble an egg in a skillet. I heat up about 1-2 TB of oil in my (grandparents' hand-me-down) wok. Then I add the cooked rice to the wok along with whatever meat I am using (pork this time), the egg, diced carrots, peas, and soy sauce to taste. Stir fry for about 10 minutes or so until it is heated through and the veggies are cooked.
