Works For Me Wednesday: Recipe for Hiding Veggies

While my kids are not the pickiest eaters in the whole wide world, they can be somewhat picky. So I am always looking for ways to sneak some veggies into their diets. Yesterday before naptime, I had them help me make Nutri-Carrot muffins. We omitted the raisins and nuts. The kids loved watching the carrots spinning around in the food processor as well as measuring and stirring. And they both happily devoured their muffins for snack after their naps. These muffins freeze well, so I popped the rest in the freezer for quick, healthy snacks another time. Yum, yum!
